Amaranto is considered by some as the original agricultural cereal product of the Incas, in fact it has been called "the cereal of the Incas." It has been known for centuries that it is a product full of nutritional qualities. Because of this and because it is easily digested, amaranto has been also used by the astronauts on trips to space. The nutritional value of amaranto is very high in comparison with other cereals. It contains high levels of vitamins, carbohydrates and protien. It has minerals such as, calcium, iron and vitamin A, which are indispensable for proper nutrition, especially in infants. Amaranto contains on average 14.7% protein, 3.1% fat and 60,7% carbohydrates. A small portion contains 510 mg of calcium, 397 mg of phosphorus and 11 mg of iron. One of the most extraordinary aspects to amaranto is it's wealth of essential Amino Acids, the "bulding Blocks" of the body. The protein in amaranto, as well as the aminoácidos, make it a more complete nutritional source especially when compared with other vegetables. Summarizing all the nutricional aspects, it can be asserted that amaranto and and products made with amaranto are foods superior as compared to those made with other cereals.

Quinua (kee-nu-wa) is an indigenous grain of The Andes. It is used especially as a human food source and has been found to have minor medicinal uses.Quinua can be used in many different forms - ground to flour, puffed (like popcorn) and in some products processed into pastes. The whole grain can be prepared like oatmeal or mixed into chocolate bars.

The by-products of quinua cultivation is used as cattle food and and burned for fuel. Quinua is the only vegetable food that provides of all eight of the essential Amino Acids necessary for proper human nutrition and is an excellent source of high quality protein. Its nourishing qualities are similar to those of milk. Although a human being can not survive with one food source alone, Dune Jhonson of the University of Colorado asserts that if he had to depend on only one food to survive, "the only one option would be quinua, without a doubt."
